Recently my son has begun noticing more and more what the other kids get in their lunches at school. I know I won’t have veto-power in his diet forever, but I just can’t bring myself to pack him “treats”.

I wanted to make him a real treat that I felt really good about giving to him. Since he loves cooking with me, especially when there are herbs or medicine involved, we decided to make these really tasty and nourishing gummies.

elderberryWe started with Elderberries cause I know we like the taste and they are such amazing immune boosters. Seasonal transitions are some of the most important times to keep your immune defenses strong. But I wanted to up the ante on the medicine. So we added:

Nettles–allergy-fighting, mineral-boosting, lymph-stimulating spring-time-cleansing medicine.

Lemon Thyme–antiseptic, anti-fungal, vitamin and mineral packed, great-tasting medicine.

Black Cherry juice–sleep-improving (trytophan and melatonin, who knew?), anti-inflammatory and anti-oxidant-full medicine.

Raw, local Honey–cough-soothing, phlegm-expectorating, bad-bug-killing, yummy medicine. (I should mention here that you are not supposed to give raw honey to children under the age of 1).

Ginger-digestive-stimulating, anti-inflammatory, immune-boosting, circulation-stimulating medicine.

Gelatin–skin, hair and joint-supporting, digestive soothing, metabolism-boosting medicine. (You can buy organic beef or fish gelatin online…the commercial stuff is made from pork.)

The great thing, though, is that you can vary this recipe pretty much infinitely. Just make sure to maintain a ratio of about 1 cup of liquid to 2  tbsp. of gelatin (or up to 3 tbsp for firmer gummies) and up to 1 1/2 tbsp. of honey (depending how sweet the juice is). Try other flavors of juice, but avoid citrus as that will degrade the gelatin. Or other herbs. (Pomegranate with Lemon Balm in the summer? Yum!).

These gummies have quickly become a BIG hit at our house…I can barely keep up with the demand.


Elderberry Gummies with Nettles and Black Cherry Juice



1/4 c. dried Elderberries
3 tbsp. dry Nettles
2 tbsp. Lemon Thyme
3/4 tsp. Ginger powder
2 c. water
5 tbsp. gelatin powder
1 c. black cherry juice
2-3 tbsp. raw honey



Place the Elderberries, nettles, lemon thyme and ginger powder in a saucepan with water and bring to a boil.

Turn down to a low simmer and continue to cook until water volume has reduced by half (around 20-30 minutes).

Strain while still hot into a bowl or jar and stir in gelatin. Allow the strained herbs to cool just enough to touch give them a squeeze to get as much juice as you can out of the berries. Add this juice to the mixture.

Add cherry juice and stir. *For a more intense cherry flavor, start with 2 c. of cherry juice and cook it down to 1 c. volume. Allow it to cool thoroughly before adding it to mixture.

Make sure the mixture has cooled to lukewarm before adding honey.

Pour into a mold and place in refrigerator to set for at least one hour. Transfer gummies to a glass container and keep refrigerated.
